The Little Truck That Can! Part 2

 

Fast Forward a Year

I had put the truck on the back burner and got through my busy season. Last month we spent the month at our place in Cape Cod. My wife at this time decided she was burnt out from Corporate America and was going to take the summer off. Cindy is my great motivator, needless to say…………lol lol. She said, lets get the food truck on the road! Let’s start expanding your business! I said cool, lets do it.

She immediately started talking to our friends/business owners at the Cape, showing them photo’s of the truck, and getting some feedback. The overwhelming consensus was it would a hit on our beach. There’s nothing down there food wise, and it very populated in the summers with families on vacation.

The next day, Cindy and I were in downtown Sandwich Ma. at the municipal buildings finding out what we would need to do to get the truck licensed and permitted. I admit, I’m a bit of a procrastinator at times, but not Cindy…..no not Cindy, her (and my) mission has begun!

It was much easier than we expected. (Which I have been telling Cindy it would be for the past year…….ya right! lol lol). That said, our truck is small.  (think post office mail truck).  Massachusetts Food Code says that (and I know this is true for most if not all cities/states) mobile food operations not equipped with an adequate water and waste system to facilitate handwashing and the cleaning and sanitizing of utensils are limited to the preparation and service of frankfurters and non-potentially hazardous foods and to the sale of pre-packaged food.   At this point we are not sure if we want to have a 3 compartment sink in the truck because of all the space it will take.

But,  one thing we did find out is that if the vehicle is parked on private property you don’t need any of the permits from the town.  This was huge, because our cottage sits on a piece of property that the truck could sit on that is private property, and it’s right in the thick of the beach foot traffic. I spoke with the members of the association and they said no problem.

Things were moving forward. We could use the truck on Cape Cod in the summer and in Tucson in the winter. In Tucson we have a few idea’s on how to use the truck…..more on that in the future.
